Wholesome Blueberry Millet Muffins

It's time someone said it. 2023 is the year that the world collectively is turning its attention back to health. Except this time, we're doing it right. The world is tired of flavorless healthy food with questionable texture and appearance. This recipe is an example of a new look at gluten-free nutrition. These muffins will brighten any morning, and they're easy to make. To get the best results, use fresh blueberries. But in a pinch, this recipe will work just fine with frozen ones.
The secret to perfect muffins lies in the mixing. To get the texture we want, this recipe whisks together the dry ingredients in one bowl, and the wet ingredients in the other. Then the dry and wet mixtures are gently mixed until just combined. This ensures the fine, tender crumb that we love about any great muffin. Equipment you will need:
Ingredients: Makes 8 muffins
3/4 cup finely ground millet flour
1/3 cup + 2 tablespoons tapioca starch
1/3 cup brown rice flour
1 1/4 teaspoon xanthan gum
2 teaspoons baking powder
1/4 teaspoon sea salt
3/4 cup granulated sugar
1 egg
5 tablespoons partially melted butter
1 tablespoon sunflower oil, or any neutral cooking oil
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/3 cup whole milk, room temperature
1 1/2 cups fresh or frozen blueberries
Sparkling sugar, optional
Directions:
Preheat the oven to 350 degrees F.
Place paper muffin liners in muffin pan
In medium bowl, whisk together millet flour, tapioca starch, brown rice flour, xanthan gum, baking powder, and salt.
In large bowl, gently beat egg.
Gradually add sugar, partially melted butter, sunflower oil, almond extract, lemon extract, and vanilla extract.
Add milk and mix until well combined.
Add dry mixture to wet mixture all at once, and mix until barely combined.
Fold in blueberries.
Fill muffin cups until 3/4 full.
Sprinkle each muffin with sparkling sugar.
Bake for 28 to 30 minutes, or until muffins are golden brown and a toothpick inserted in the center of the largest muffin comes out clean.
