'Tis the Season for GF Brioche Apple Fritters

Now that we're officially in the holiday season, it's the perfect time to make apple fritters! But this is not your ordinary apple fritter recipe. These are gluten-free brioche apple fritters. Definitely something you don't find every day! I created this recipe to give you an apple fritter with a lightly crisp exterior with a soft, luxurious interior full of chunky spicy apples. You can use the apple of your choice, but in the recipe video I used green apples this time, because I love ALL apples. Apples really do make this season one of my favorite times of the year. So I take advantage of this season, by breaking out my favorite apple desserts.
To make these fritters, make your dough a full 24 hours before you plan to fry them. This dough requires a long, cold fermentation process in the refrigerator. The refrigeration is also necessary to make the dough easier to handle. I make this
dough in the conventional brioche fashion using lots of eggs and lots of butter. I go a step further by using GF tangzhong, a type of roux used in baking to enhance texture, browning, and shelf life. I created a recipe video for tangzhong to walk you through the process. See it here:
One thing to keep in mind when making these apple fritters: Make sure your apple filling has completely cooled before cutting it into your dough as I show in the video. Adding hot apple filling to the dough will not only ruin your precious dough, but it will also kill yeast. I hope you enjoy this video. This is one of my very favorite recipes because it is so versatile. In fact, you can use this dough to make the fluffiest, most amazing GF brioche doughnuts! Or...you could even fit this dough into a 4" x 9" cast iron loaf pan and make a fabulous loaf of GF brioche bread!!! Ooops, well now the secret's out!
