It’s time for quiche to make a comeback.

I believe it really could. No one understands the value of nourishment more than someone who needs to be gluten free. And off the top of my head, when I stop to think about all of the quick, relatively easy to prepare dishes that are nutritious AND taste great, quiche is right there on top.

I’m in love with quiche. In love with its simplicity, versatility, and understated elegance. To manifest the perfect quiche, all you need to do is commit to using the best of each component you can find. I like my custard creamy, rich, and silky with a touch of nostalgia.

There’s a quiet catharsis in prepping the ingredients; the slicing, chopping, and sautéing of the meats and vegetables. And how could we forget about the crust.
