The Monarch —a strawberry and chocolate vision
For Eric's 60th birthday, I wanted to make him a cake that symbolized all of my love and appreciation for everything he is and has become over all the years of his life. I remembered that he imagined strawberries and chocolate combined in a birthday cake, so I immediately started thinking of ways I could go over the top for him.
This cake has two layers of luxurious GF Belgian chocolate genoise, filled generously with silky strawberry Swiss buttercream and sweet, fragrant organic strawberries. Then, to top off the cake, I covered the top with luscious Ghirardelli dark chocolate ganache and a crown of six large Belgian milk chocolate covered organic strawberries. The cake is made with cultured butter from France, premium Belgian and American chocolates, pasture- raised eggs, and succulent organic strawberries.
I named this cake The Monarch, because that’s how loved and important my husband Eric is to me and so many other people in this world. One taste of this cake, and anyone else would agree that it is fit for royalty. You are royalty. You deserve this.
