My recipe produces a very soft dough, and it requires gentle handling. I strongly recommend that you use a special baguette pan to help the loaf keep its long, cylindrical shape. I've provided an Amazon affiliate link for the pan you see me using in the video. Although the instructions on the pan say that it doesn't require greasing, I recommend that you oil the pan before baking these gluten-free baguettes.

Please watch the video at least two times before you attempt this recipe. As I said before, the dough is very soft, and you'll want to really pay attention to the way you see me shape the loaves and place them into the pans. To get that signature crustiness I placed a pan of boiling water on the bottom rack of the oven to provide steam during the first 2/3 of the baking process. I also brush the loaves with a French egg wash to give them the characteristic golden color.
This is a very versatile recipe. Occasionally I shape this dough into a boule and bake it in a cast iron Dutch oven. This dough also makes a fantastic pizza crust. It would also make great bread sticks. The possibilities are virtually endless. I am confident that this recipe will become one of your favorites. I am in love with this recipe for good reason.
