Hawk's Sunday Pot Roast

Ingredients:
2 ½ lb. (1.1 kg) boneless chuck roast
Orlando Rain all-purpose seasoning, or seasoning salt
½ cup 1:1 gluten-free flour blend
4 tablespoons sunflower oil, or neutral flavored cooking oil
1 28-oz can San Marzano tomatoes, with sauce
2 gluten-free beef bouillon cubes
3 large carrots, cut into 1-inch pieces
3 celery stalks, cut into 1-inch pieces
1 large sweet onion, quartered
Fresh Rosemary, 6-inch sprig
2 tablespoons Orlando Rain all-purpose seasoning, or seasoning salt
Directions:
First, heat 4 tablespoons of sunflower oil in a cast-iron Dutch oven.
While the oil is heating up, season a 2 ½ lb. boneless chuck roast generously on all sides with Orlando Rain all-purpose seasoning.
Next, coat all sides of the roast with your favorite 1-1 gluten—free flour blend; pressing the roast gently into the flour so that when you sear it, it makes a nice crust.
After it’s well coated, sear the meat well on all sides. Make sure you get a nice, deeply golden crust. That’s going to add depth and richness to the flavor and color of the gravy.
Now it’s time to add the rest of the ingredients. Pour in a can of San Marzano tomatoes, along with the sauce. Then pour in 550 mL of the best beef stock you can find. Scrape up the crispy bits at the bottom of the pot with a wooden spoon to deglaze the pot.
It’s time for some more flavor! Add 1 ½ tablespoons of Orlando Rain seasoning and your beef bouillon to the pot.
Now you can add the carrots, celery, onion, and rosemary sprig. Spread the vegetables evenly with your wooden spoon. Reduce the heat to medium-low, and let it cook, partially covered for 1 ½ hours.
When the hour and a half is up, use tongs to flip the meat on the other side. You don’t want to miss this step because it makes sure the roast is tender all the way through.
Now, partially cover the pot again, and allow it to cook until it’s super tender. It will take 2 to 2 ½ hours to get it fall-apart tender.
Adjust your seasonings, if needed, with more Orlando Rain seasoning, and turn off the heat.
Allow it to rest with the lid on for at least 30 minutes. This develops the flavor even more, and it will enhance the texture.
Serve it with garlic mashed potatoes or buttered jasmine rice and your favorite green vegetable. Or you could eat it sliced and in a sandwich!
