GF French Toast Casserole

Here’s my easy and super delicious gluten-free French Toast Casserole recipe. In this recipe I used powdered whole milk and powdered heavy cream. It's ready to eat in less than an hour, and your whole family will enjoy it. You can use 600 grams of half and half in place of the whole milk powder, heavy cream powder, and 550 grams of water, if you prefer.

GF French Toast Casserole
Ingredients:
500 g gluten-free bread, cubed (I used leftover gluten-free brioche
28 g whole milk powder
28 g heavy cream powder
550 g water, room temperature
115 g granulated sugar, plus extra to sugar the baking pan
4 whole eggs
¼ teaspoon salt
¼ teaspoon nutmeg
1 tablespoon vanilla extract
Sparkling sugar, optional
Vegetable shortening, to grease pan
Directions:
In a 3-quart saucepan, add whole milk powder and heavy cream powder.
Pour in water and turn on medium heat.
As water heats, keep stirring the mixture until it is fully dissolved and just beginning to steam. Remove saucepan from heat.
Whisk in sugar, salt, nutmeg, and vanilla.
Begin to whisk in eggs, one at a time until thoroughly combined.
Add cubed bread all at once and fold it in until it is well coated.
At this point you can also fold in crushed pineapple and/or raisins, if you desire.
Preheat oven to 350 F.
Generously grease a 9”x4” loaf pan, and coat it with granulated sugar as you would grease and flour a pan for baking.
Give the mixture a final mix, and pour it into the prepared pan.
Use a spatula to even out the mixture, and sprinkle the top decoratively with sparkling sugar as desired.
Bake in a 350 F oven for 43 to 50 minutes, or until top is golden brown and toothpick inserted into the center comes out clean.
Allow to cool for 15 minutes.
Serve with maple syrup, sweetened whipped cream, and/or whatever you desire.
